The name ROVI(briers) is dedicated to the legend that , according which, the city of Ruvo di Puglia gets its name from the briers that are spread around the countryside.
It is vinified according to tradition but using modern technology under controlled temperature. The bunches are collected in crates and transported to the winery where they got crushed and soft pressed, then subject to most maceration at 25°C. At this temperature grapes slowly and fully release tannins and anthocyanins, two essential parts of the red wine. The peculiarity of this product is that entire vinification was carried out in stainless still tanks in order to preserve its freshness.
